Rhubarb-Hibiscus Fizzy Iced Tea


Now that summertime is here, what better way to spend the balmy evenings sitting on the terrace and enjoying a refreshing iced tea? Here's my fruity and fizzy version with sparkling water.

Was gibt es schöneres als an lauen Sommerabenden draußen auf der Terrasse zu sitzen und einen erfrischenden Eistee zu genießen? Hier mein fruchtiges Rezept. (mit Sprudel)


Ingredients / Zutaten

1 kg rhubarb / 1 kg Rhabarber
1 piece ginger / 1 Stück Ingwer
80 gr raw cane sugar / 80 gr Rohrohrzucker
2 hibiscus tea bags / 2 Beutel Hibiskustee
chilled sparkling water / gekühltes Mineralwasser (mit Kohlensäure)
ice cubes / Eiswürfel (optional)


Wash rhubarb and chop into small pieces. Transfer to medium sized pot. Peel and slice ginger and add to rhubarb with the sugar. Add 1 ltr water and bring to boil. Drop in the two hibiscus teabags, cover and simmer on low for 10 - 12 minutes or until rhubarb has turned mushy. Remove from heat and let cool. Then strain through a sieve. You will end up with a lovely pinkish, slightly syrupy liquid. Refrigerate.

To serve: fill up tall glasses halfway with liquid. Top with chilled sparkling water and if you like it extra cold add a couple of ice cubes. Enjoy!

Rhabarber putzen und ich kleine Stücke schneiden. Ingwer schälen und in Scheiben schneiden. Beides in einen Topf geben. Den Zucker zugeben und mit 1 Liter Wasser auffüllen. Alles aufkochen lassen, dann die zwei Teebeutel zugeben und zugedeckt bei geringer Hitze ca. 10 - 12 Minuten ziehen lassen. Abkühlen lassen und später durch ein feines Sieb seihen. Kühl stellen.

Servieren: Hohe Gläser mit dem Rhabarbersud zur Hälfte auffüllen, Mineralwasser zugeben und wer es besonders kalt mag gibt noch ein paar Eiswürfel dazu. Prost!

Hallo liebe Duni,
also farblich ist Dein Rhabarber-Eistee schon nicht zu toppen ( Du hast ihn so schön dekoriert!!).
Dann kann er eigentlich auch nur gut schmecken. :-)
Kann man Rhabarber jetzt noch kaufen? Wenn nicht, ich habe mir schon sicherheitshalber welchen eingefroren. Juhu! :-)
